Mexicana Twister – Little Lab
If you’ve not been up to this little Staunton Street hideaway, then let the Mexican Twister be your rationale; with a lively after work crowd and a menu laced with equal lashings of innovation and traditional Hong Kong ingredients, it’s a sure thing for cocktail aficionados. Created by mixologist Alex Ng, the Mexican Twister includes 1800 Reposado tequila, fresh lime and grapefruit juice, and tangy home-made syrup made from dried tangerines that’s guaranteed to herald in summer in style. Tropical Storm – Honi Honi
If we’re talking about summer cocktails there’s no better place than the city’s only tiki bar, Honi Honi, where general manager Fabien Marcault has created the perfect ode to summer nights. With 42 Below vodka, passion fruit purée, elderflower syrup, monin syrup, guava juice, and strawberry purée, look out for the Tropical Storm’s flaming Bacardi 151 passion fruit garnish, a sure way to heat things up at one of the bar’s alfresco “beach” parties (yes they have a shower to cool you off after). 3/F Somptueux Central, 52 Wellington Street, Central, http://honihonibar.com
Jolly Roger, The Roger Room
If a bit of spice and heat is your thing this summer, head for the city’s only pirate bar, The Roger Room (sister joint of Chichas), where the signature Jolly Roger cocktail is infused with aji (Peruvian chili). Co-founder and manager Piero Marongiu has blended the chili with fresh summer berries, Miolo Millésime sparkling wine, lemon juice, and plenty of fiery Demonio de los Andes Quebranta pisco, a Peruvian grape brandy, to create a cocktail that heats you up and cools you down all at the same time. Bada Bing Bada Bang, Souvla
You go to Souvla for their palette-pleasing brunches and their perfectly grilled meats, but don’t forget they also have a great cocktail bar that’s not only larger than many in LKF below, but also serves up plenty of great cocktails laced with the iconic Greek spirit Metaza. The Dinosaur, The Envoy
Opening in May, The Envoy is the newest creation of mixologist Antonio Lai, who will infuse the new venue with his passion for vintage cocktails and molecular innovation. Details are short on the ground at the moment but expect some very imaginative concoctions (we’ve heard talk of a cocktail made to look like a blood transfusion kit), including the eye-catching Dinosaur, a Milo ice ball infused with dark rum, Jax Coco water, and Godiva chocolate liquor. Dusted with Milo powder on top, it might not be the most gentlemanly of elixirs, but it’s sure to be a hit with sweet-toothed femme du jours. Stanley Street, Central.
Watermelon & Cilantro, The Woods
Slated to open mid-summer on Hollywood Road, The Woods promises a list of seasonal cocktails, including an innovative cooler packed with summer flavours. With cilantro (coriander) leaves, kaffir-lime infused vodka, lime juice, fresh watermelon, chili powder, and salt and pepper, this is one packs a punch and will be best enjoyed in the bar’s reservation-only area.
